You know that the modern kitchen with tiny portions and flat, square plates? Who started all this?
No, but I mean the tendency west of the presentation Anything food-west-even in tiny portions with perfectly flat, square plates, with ribbons of sauces spread here and there in trace amounts, like a painting of modern art.
Your talking about the new kitchen. It began in France at the end of the 60's, supposedly a food as art movement. The idea was that these tiny carved part appealed to the eye much as the palate. It is out of hand of course, like any trend in new food seems (remember the late 80's rocket craze?). It was somehow a rejection of Escofier, but has since been dismissed by most new leaders.
